Before you book anyone

1. Ask for the certificate of insurance up front. No state license exists for this trade, so insurance is the only paper that matters, and most venues require it before an outside planner, server, or bartender can work the event.
2. For bartending: at a private event where you supply the alcohol, New Jersey does not require a bartender license, but the person pouring should carry liquor liability insurance and know when to stop serving someone; ask how they handle both.
3. Get the scope in writing: hours, how many staff show up, what headcount they can serve, and where setup ends and cleanup begins. Day-of surprises in this trade are almost always scope disputes.
4. Get deposit and cancellation terms in writing before you pay anything.
5. Ask for two or three references from events in the last year and actually call them; this trade runs on word of mouth, and a good operator hands over names without hesitation.
